spicy cocoa roasted almonds

So they aren’t the prettiest things in the world, but they certainly are delicious & simple to make! The recipe can be made vegan and non, please see below. They are slightly addictive and probably won’t last long…

Spicy Cocoa Roasted Almonds

  • 3 cups raw almonds soaked in water for about an hour, pat dry
  • 1 tablespoon vanilla bean paste or a splash of extract
  • few drops of water
  • 1/3 cup brown sugar
  • 1/3 cup raw sugar or 1/4 cup stevia
  • 2 tablespoons cocoa
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne (more or less depending on how spicy you want them to be)
  • 1/4 teaspoon sea salt
  • 1 egg white (for vegan version, mix 1 tablespoon flax with 3 tablespoons warm water, whisk together)

Preheat the oven to 140 (275c) and line a baking sheet with parchment paper.
Beat egg white with vanilla, few drops of water until frothy. Add almonds to mixture and coat evenly.

In a separate bowl, mix remaining ingredients. Add almonds and toss until all are coated. Spread almonds on the baking sheet and roast for about 40 minutes, mixing every 15 minutes. Almonds burn quickly, so be sure to keep an eye on them.

Store in an airtight container.
